Bush Banquet 2007

Oyster Festival

LHS in conjunction with Execuplay hosted the 2008 Oyster Festival at Brightwater Commons in May. The festival has been running for 3 years but LHS got involved with this exciting project this year. The festival that stretches over a Saturday and Sunday focuses on Oysters and wine and although the firm favourite is definitely fresh oysters, a selection of cooked oysters from around the globe was also available. The festival was a huge success and the number of sold oysters tallied to a whopping 14 000, more than double the previous year. Guests were so impressed by the way in which the function was organised that we have received requests to do similar events in 2009.



Hong Kong

Chef Lehan Botha was chosen to represent South Africa in Hong Kong as part of the 10 year celebration of Diplomatic relations between the 2 countries. It was a full schedule with lots of functions and cocktail parties to cater for. The experience Lehan gained has already been incorporated into the study material for LHS students.


Mr and Miss Legend Pageant

The students of Lhs were tasked to plan and put together a function for the parents and families of students. The result was the birth of the Mr and Miss Legend Pageant. The evening was coordinated and executed by the students and the feedback from the parents and other guests were amazing. Most parents could not believe how their children has developed and grown over the course of the year. The food was great the pageant was excellent and well rehearsed and there was laughs a plenty. Well done.


Miss World Pageant

LHS was contracted to be official caterers and camp managers for the Welcome and Gala Dinner as well as the entire Pedi Camp during the Miss World Safari-leg held at Legend Golf and Safari Resort.

LHS compiled all the menus for the stint and after a successful welcome dinner for more than 200 guests the focus shifted to the Pedi Camp. LHS was responsible for the complete operation of the Camp.

The most important areas were Housekeeping, where traditional Pedi Huts were converted into rooms for the Miss World Contestants. With the full 5 star setup including amenities, beautiful linen, mobile shower and toilet units brought in especially for the event we truly created comfort in the middle of the bush.

The Food and Beverage requirements completed the picture with beautiful Al Fresco breakfast and lunch setups in the garden of the Eugene Marais Museum and then a real African Dinner experience in the Village. Contestants got to prepare traditional African Potjie dishes as part of the team building which was served as a wonderful buffet together with some special dishes prepared by the LHS students. Students also facilitated in the Potjie preparation. As an added bonus the contestants were entertained with a number of Survival Cooking and Camping techniques.  

The program culminated with the Gala Dinner on the final night for 320 guests. With a star studded program filled with awe-inspiring performances by renowned musicians such as Kurt Darren, Zamar and Bella Vocha and celebrity presence such as Darren Scott and of course the contestants it was clear that LHS students would have to put forward a memorable meal experience. With a beautiful Chicken and Chorizo terrine with a pepper coulis and pickled cucumber to start and a buffet main course including dishes like a whole roasted Pepper Fillet, Lamb loin with a Herb Crust and Salmon and Prawns Thai Curry we did just that. The menu was completed with a selection of individually plated desserts including a triple chocolate tart, Pineapple, Strawberry and Mint Parfait with fresh fruit skewers and a Cheesecake with Berry Compote.

The event was an extremely successful one for LHS and the whole of Legend and if all goes well we might even do it all again in the near future.
